Curry pork en papillote with coconut milk

Ingredients
- 2 duBreton Curry Pork Boneless Loin Filets
- 4 carrots, julienned
- 1 L (4 c.) of snow peas
- 1 red pepper, cut into strips
- 2 green onions, thinly sliced
- Salt and fresh ground pepper
- 60 mL (¼ c.) of fresh chopped basil
- 125 mL (½ c.) of coconut milk
Preparations
- Slice each loin filet into 3 pieces.
- Preheat oven to 500°F (260°C).
- Set out 6 pieces of aluminum foil on the counter.
- Divide the vegetables among each piece of foil. Season to taste.
- Place one piece of pork in each nest of vegetables, top with basil and drizzle with coconut milk.
- Cover each serving with a second piece of aluminum foil and then fold in the foil on all sides to make sealed packets.
- Bake for 20 minutes and serve.
Cooking on barbecue:
- Preheat barbecue to medium-high heat.
- Place the foil packets on the grill and cook for 10 to 12 minutes.
