Ingredients
- 15 ml (1 tbsp.) olive oil
- 15 ml (1 tbsp.) butter
- 4 loin chops center cut frenched duBreton
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 125 ml (1/2 cup) white wine
- 625 ml (2 1/2 cups) fresh diced tomatoes
- 2-3 stems of fresh thyme or rosemary
- Ground salt and pepper
Preparations
- Pre-heat oven to 375oF (190oC).
- Heat oil in a large pan over medium heat and melt butter. Sear pork chops 1 to 2 minutes per side, generously season. Set aside pork chops.
- Sauté the onion and garlic in the pan.
- Deglaze with wine, add tomatoes and herbs.
- Place pork chops in the pan and continue baking in the oven for 15 minutes.
- Serve pork chops garnished with cooked tomatoes and pair with vegetables and/or pasta.
