Ingredients
Peanut Sauce :
- 80 ml (1/3 cup) peanut butter
- 60 ml (1/4 cup) coconut milk
- 1 clove of garlic, minced
- 5 ml (1 tsp.) fresh chopped ginger
- 30 ml (2 tbsp.) honey or maple syrup
- 30 ml (2 tbsps.) fresh chopped coriander
- 30 ml (2 tbsps.) rice vinegar
- 30 ml (2 tbsps.) soya sauce
- 5 ml (1 tsp.) Sambal Oelek
- Salt
- 1 package duBreton pork cutlets
- 3 green onions, cut into quarters
- 1/2 red pepper, cut into strips
Preparations
- Using a blender or hand blender with tall container, mix all sauce ingredients so as to obtain a smooth sauce. Salt to taste.
- Transfer sauce to a bowl and reserve 60 ml (1/4 cup) in the blender.
- Pre-heat oven on broil or barbecue at medium-high.
- Using brochette sticks, place one strip of red pepper, followed by a piece of green onion and finally a cutlet, alternating the brochette stick over and under. Place on lightly oiled cooking sheet. Repeat with remaining cutlets.
- Using the reserved sauce from blender, baste brochettes with brush.
- Bake in oven for approximately 7 minutes or until meat begins to brown or on the barbecue for 3 to 4 minutes each side.
