
Ingredients
- 4 Wheat tortilla breads
- 250 ml (1 cup) mild salsa
- 250 ml (1 cup) thawed corn
- 1 Red onion, chopped
- 1 coloured bell pepper, diced
- 375 g grated tex-mex cheese
- 1/2 jalapeno pepper, finely chopped
- 1X 500 g package duBreton Mexican sausage meat
- 30 ml (2 tbsp.) vegetable oil.
- 60 ml (1/4 cup) chopped flat-leaf parsley
Preparations
- Heat vegetable oil in a large skillet over medium-high heat.
- Brown the Mexican sausage meat for about 6 to 8 minutes, crumbling with a wooden spoon.
- Add the onion, bell pepper, corn and jalapenos. Cook for 4 to 5 minutes.
- Stir in salsa, parsley, salt and pepper and keep warm.
- Heat tortillas in a hot frying pan for a few seconds.
- Place a tortilla on a work surface and spread on one side the meat mixture.
- Sprinkle with Tex-Mex cheese and chopped cilantro.
- Close each side of the tortilla over the filling and roll up tightly to enclose filling.
- Turn the burrito over so that the seal is underneath. Repeat 3 more times.
- Brown the burritos in a frying pan for a few seconds, turning them over several times until crisp.
