Pork burger with bacon and creamy chipotle sauce

Ingredients
- 4 slices duBreton organic bacon
- 4 hamburger buns
- 4 slices Monterey Jack cheese
- A few lettuce leaves
Pork patties :
- 1 pound duBreton ground pork
- 1 egg
- 120 ml (1/2 cup) breadcrumbs
- 10 ml (2 tsp.) smoked paprika
- chopped cilantro
Cabbage salad :
- 1/2 cabbage, chopped into thin strips
- Juice of one lime
- 15 ml (1 tbsp.) sugar
- 15 ml (1 tablespoon) mayonnaise
Chipotle cream sauce :
- 120 m (1/2 cup) mayonnaise
- 60 ml (1/4 cup) chipotle sauce
- 1/2 dill pickle
- A few fresh cilantro leaves
Preparations
- Preheat oven to 425°F.
- Spread bacon on baking sheet. Bake for 10-12 minutes.
- In a bowl, mix ground pork, egg, breadcrumbs, a little chopped cilantro and smoked paprika. Season with salt and pepper and shape into 4 patties.
- In a frying pan, over medium-high heat, add a drizzle of olive oil. Add the pork patties and cook for 4-5 minutes on each side. Lower the heat, add the cheese slices and cover until the meat is cooked and the cheese is melted.
- In a bowl, combine cabbage, lime juice, 1 tbsp. mayonnaise, sugar and a little chopped cilantro.
- In a blender, combine mayonnaise, pickles, chipotle sauce and cilantro.
- Prepare burgers with burger buns, chipotle sauce, lettuce leaves, pork patties, bacon and coleslaw.
