Ingredients
- 15 ml (1 tbsp.) olive oil
- 1 65g package of duBreton Appalachian Treasure Dry Sausage
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 leek, chopped
- 2 celery sticks, chopped
- 2 carrots, cut into rounds
- 2 parsnips, cut into rounds
- 500 ml (2 cups) diced rutabaga
- 1 796 ml (28 oz) tin diced tomatoes
- 5 litre (6 cups) vegetable broth
- 1 litre (4 cups) spinach
- Ground salt and pepper
Preparations
- Using a large saucepan, heat oil over medium heat and sauté slices of dry sausage with the vegetables for 10 minutes.
- Add the tomatoes and the broth. Bring to a boil and simmer for 20 minutes.
- Cut sausage into strips.
- Add the spinach and the dry sausage strips, stir and adjust seasoning.
